TASTING NOTES
Based primarily on a chosen block of
Petit Verdot harvested early, foot tread and sent directly to press for our
rosé, this wine is not your typical California pink. A gorgeous pale coral/wild
salmon hue, the aromas nearly transport you across the Atlantic to the
Languedoc region of France. A combination of potpourri, wet stone and salinity
enhance the enticing perfume of honeydew rind and tart apricot. The palate
follows through with a fascinating blend of apricot, cranberry and tart red
apple, with a delicious hint of iron to carry through on the long and minerally
finish. Bright, alluring and layered, this delightful rosé satisfies on every
level.
A note about temperature: Many people
assume that rosé is meant to be consumed ice cold. While that may be
refreshing, it will also mask the full character of this wonderful wine.
Typical "cellar temperature" in the neighborhood of 55º F is ideal to
experience our Estate rosé at its very best.
FOOD AFFINITIES
Rosé is a tremendously versatile wine when it comes to
pairing with foods. Its light and bright qualities make it a natural to
accompany anything with a bit of spice such as Chinese, Thai, Indian or Mexican
fare. Our rosé in particular is also a great match for fish, scallops, oysters,
mussels, shrimp, anything that might be pulled from the Mediterranean! You will
also find it right at home with your favorite selection of cheese, crackers and
olives.
AGEABILITY
Rosé is crafted for early enjoyment and ready to be
served right away. That being said, under proper cellar conditions, our 2018
rosé should develop nicely for another 2-3 years.
