Our 2016 Best Barrels Cabernet
Sauvignon is comprised of two different picks from the prized Block 10
at our Alexander Valley estate. We harvested a portion earlier for
enhanced structure and spice, and the remainder eight days later for a
richer, fuller fruit expression. After 24 months in the cellar, we
carefully selected just eight barrels for this flagship bottling, adding
a bit of Petit Verdot to polish and perfect the final blend.
Winemaker's Tasting Notes
2016 blessed our
entire estate with near perfect growing conditions and the Cabernet
Sauvignon was no exception. A beautifully dense ruby color is followed
by absolutely captivating aromas of dark black cherry and black currant,
all the more intriguing with notes of graphite, tobacco and black
licorice. The palate explodes with more dark fruits, blueberry, plus
wonderful hints of baking spice and vanilla bean on the glorious finish.
The overall balance of this wine is remarkable, seamlessly folding in
75% new French Oak to complement the natural body for an interplay of
intensity, refinement, structure and polish that is an absolute stunner!
Food Affinities
Cabernet Sauvignon is
recognized as a classic pairing with all red meats, fruity and savory
reduction sauces, earthy mushrooms and rich cheeses. That being said,
the pedigree of this Best Barrels beauty will be best showcased by a
perfect filet, either grilled or broiled to perfection, lightly seasoned
with no more than salt, pepper and olive oil.
Ageability
This intensely flavored and deftly
balanced Cabernet Sauvignon will enter its prime drinking window around
mid- to late 2020 and easily cellar for another 20+ years.
