This wine has Viognier's signature viscosity yet remains delicate and supple due to it's cool climate origins. Once used French oak barrel aging adds texture to the palate while refraining from masking or stealing the spotlight from the expressive vibrant fruit.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;FOOD AFFINITIES&lt;/div&gt;&lt;div&gt;This vintage in particular begs for rich cream sauces over poultry, or even a mildly spicy Thai curry. And then there are all the seafood possibilities: Mahi-Mahi, swordfish, crab, lobster, shrimp, and oysters to offer a textural harmony that will absolutely delight. A long, cool, and spectacular season allowed for consistent, slow ripening. That is why Blue Rock sourced cuttings directlyfrom Fattoria Bernadrdini, one of the world's greatest producers inLucca, Italy: to bring you oils unlike any other produced in California.&lt;br /&gt;&lt;br /&gt;Our Blue Rock olive oil is produced from a field blend of 4 Tuscan varieties; Leccino, Frantoio, Muarino and Pendolino.&lt;br /&gt;&lt;br /&gt;&lt;/font&gt;&lt;div&gt;&lt;font size="2"&gt;The olives are harvested by hand in the fall. They are pressed the day they are picked with a traditional Italian mill to emphasize the richnessinherent in the fruit. We bottle in small batches throughout the year,with the unbottled oil stored under argon gas to keep it fresh. Unlikewine, olive oil is best the minute is it pressed. Our oil is rich andcreamy with a garden-fresh aroma and a blast of pepper in the finish. Asediment is both welcomed and expected as it is bottled unfiltered inorder to retain its pundgent personality.&lt;/font&gt;&lt;/div&gt;&lt;font size="2"&gt;&lt;/font&gt;&lt;div&gt;&lt;font size="2"&gt;&lt;br /&gt;&lt;/font&gt;&lt;/div&gt;&lt;font size="2"&gt;&lt;/font&gt;&lt;div&gt;&lt;font size="2"&gt;Use as a substitute for butter with bread. Mineral, gravel, balsam, graham and dark chocolate balance the juicy red and black fruit core. A supple, yet tightly wound Pinot Noir that will mature with grace for a decade. Two medium toasted Gathier Freres barrels provide the new French oak which perfectly complements our Pinot Noir. Located in nearly the exact "Centre" of France, in the small village of Menetou-Salon, Tonnellerie Gauthier Freres has been hand splitting oak for barrel staves for several generations and crafting their own wine barrels since 2001.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;div&gt;&lt;b&gt;Food Affinities&lt;/b&gt;&lt;/div&gt;&lt;/div&gt;&lt;div&gt;&lt;div&gt;Our preferred pairings would include seared salmon, roasted guineafowl, hoisin crispy duck, grilled lamb with herbs and fennel, anything with wild mushrooms, plus dishes accented with cherrires, figs or dried cranberries. All six of these varieties are featured in our Baby Blue Cabernet Blend. The vintage of 2022 was memorable for its brevity. All grapes were harvested before the end of September. Terms like "Heat Dome" and "Rolling Blackouts" reemerged in our vernacular. This Cabernet Sauvignon based blend truly embodied an early and intense harvest. Vibrant red and black fruit aromas, lively acidity, structured and mouth coating tannins and a jammy, luscious viscosity. The blend was assembled one month prior to bottling to let all the unique components meld and harmonize.&lt;br /&gt;&lt;br /&gt;The aromatic profile is rich with bing cherry, raspberry, cinnamon and dried sage.
