Winemaker's Tasting Notes

There are moments when the deep ruby color of a red wine is about the most satisfying experience we can have, then of course we smell and taste the wine and things somehow manage to get even better! Our 2022 Baby Blue Red begins with polished aromas of blackberry, dark currant, pencil shavings, hints of peppercorn, tilled earth, cedar and vanilla bean that sing of an absolutely brilliant young wine. Not to be outdone, rich flavors of both black and red fruits, savory spices, hints of black tea and espresso, and just the right touch of toasty oak in the background suggest this beauty will enjoy a long and celebrated evolution. Altogether more sophisticated and impressive than its "Baby" name might suggest, we may have outdone ourselves on this one!

Food Affinities
The most versatile of our estate wines, you can pair Baby Blue with just about any meal designed for a Bordeaux-inspired red. Grilled beef, lamb or pork are easy suggestions, but duck or chicken will do just as well. Hard cheeses, nuts and dried fruits will also go nicely if you are just snacking and sipping. But honestly, sometimes you just want a burger and this wine plays that game too. So listen to your desire and follow it wherever it takes you!

Ageability
As always, Baby Blue is intended for earlier drinking pleasure. That said, the 2022 is perhaps our most pedigreed version in a long while and will continue to age nicely for another 10+ years. Yet why wait? We certainly won't! However, it's comforting to know that this fine wine will stand the test of time if a bottle or two happens to get lost in the cellar.

Winemaker's Tasting Notes

2021's growing season started later than usual for us at Blue Rock. A cool spring and growing season allowed a longer hang time. The wine has a pristine dark red and deep purple tint. The aromas celebrate the dark side of Cabernet as well, featuring ripe black plum, black currant and black cherry heightened by an intriguing note of graphite and subtle touches of black pepper and vanilla. All these elements come to a beautiful crescendo on the palate in perfect harmony and balance, with fine tannins, beautiful acidity and a dash of warm baking spices on the long and satisfying finish.

Food Affinities

This one is a slam dunk for all your red meat favorites - filets, short ribs, T-bones - grilled or broiled, with salt, pepper and olive oil, or topped with herbed red wine reduction sauces. Aged cheddar and most other hard cheeses will play along nicely as well. The balance on this wine makes it an easy pairing with all of your fall and winter favorites.

Surprisingly approachable already, this Cabernet will nonetheless age effortlessly for another 10-15 years or longer when properly cellared.

2018 is going to be recognized as a show-stopping example of what California can achieve when all the stars align, and oh my, did they line up this vintage. A pristine dark red and deep purple tint at its core tells you right away this is a serious contender. The aromas celebrate the dark side of Cabernet as well, featuring ripe black plum, black currant and black cherry heightened by an intriguing note of graphite and subtle touches of black pepper, vanilla and sun-baked earth. All these elements come to a beautiful crescendo on the palate in perfect harmony and balance, with fine tannins, beautiful acidity and a dash of warm baking spices on the long and satisfying finish. This Cab might just be too good. We are in love.
