Vineyards
A wonderful growing season capped off by intense heat throughout
October meant our oldest vines of Cabernet Sauvignon from the highest
elevation rows on the Blue Rock Vineyard achieved amazing hang time.
Winemaker's Tasting Notes
The barrels selected to best compliment our Cabernet Sauvignon were
three year seasoned, extra tight grain French Oak toasted with a Long
Medium Toast profile by Tonnelleries Nadalie of Ludon-Medoc France. The
wine possesses aromas and flavors of sweet black fruits, cocoa, pencil
shavings and candied cherry with floral undertones. The mid palate
displays impressive density and the tannin profile is chewy, tightly
wound and extremely age worthy.
Food Affinities
Begging for dishes rich enough to complement its own impressive
stature - from the perfect filet mignon to wild mushroom risotto to
robust cheese - all the classic Cabernet pairings will work beautifully
here.
Ageability
Will cellar with increasing elegance and refinement through 2040.
